Ratatouille a la Scoop

Alright, so, forget that touching/stupid little movie and everything, ratatouille is so super delicious and not at all girly of me to make; even with Katie saying things like "awww, it's so cute!". 



Basically, ratatouille is just squash, eggplant and tomatoes/tomato sauce. I decided to make it in a cast-iron skillet with a raw tomato sauce on the bottom and tomatoes laid in with the squash and Japanese eggplant... and the secret - basil leaves up in there too.


We threw a little garlic, olive oil and balsamic on top, popped it in the oven and 30min later.... magic.
